Turkey Breakfast Sausage Patties

Ingredients:
These sausages have such a great flavor. No one will guess that they are made from turkey breast…ground mushrooms and oats keep them from tasting dry!
- 1 lb “extra lean” ground turkey breast (99% lean/1% fat)
- ¼ cup quick cooking oats
- 1 egg white
- 6-8 oz package of Baby Bella mushrooms (ground in a food processor to equal about 2 cups)
- 2 tsp ground sage
- ½ tsp ground thyme
- ½ tsp cayenne pepper (optional)
- ¼ tsp garlic powder
- 1/8 tsp celery seed
- 1/2 tsp salt
- black pepper to taste
- 4 bay leaves (optional)
Instructions:
- In a large bowl, mix all ingredients (except bay leaves) very well.
- Form into 12 patties.
- “Dry fry” the patties on a nonstick saute pan over medium to medium high heat. Toss in bay leaves, if desired for extra flavor, but do not eat.
- Turn patties and heat until cooked through to an internal temperature of 165 degrees F.
