Ingredients:
Serve as a brunch entrée with a salad and fresh fruit.
- 10-12 oz pkg frozen chopped spinach, thaw & squeeze dry
- 4 egg whites or equivalent egg sub
- 16 oz nonfat cottage cheese
- 8 oz fat-free sharp cheddar cheese, cut into small cubes or shredded
- ¼ cup whole wheat flour
- ¼ tsp garlic powder
- Black pepper, to taste
Instructions:
- Preheat oven to 350 degrees.
- Mix all ingredients together & place in an 8 by 8 inch baking pan lightly prepared with nonstick cooking spray.
- Bake for 35-45 minutes (until knife comes out clean).
- Cool 10 minutes.
Note: I used “Lifetime” fat-free cheddar cheese.
