Turkey Breakfast Sausage

Ingredients:

These sausages have such a great flavor.  No one will guess that they are made from turkey breast…ground mushrooms and oats keep them from tasting dry!

  • 1 lb “extra lean” ground turkey breast (99% lean/1% fat)
  • ¼ cup quick cooking oats
  • 1 egg white
  • 6-8 oz package of Baby Bella mushrooms (ground in a food processor to equal about 2 cups)
  • 2 tsp ground sage
  • ½ tsp ground thyme
  • ½ tsp cayenne pepper (optional)
  • ¼ tsp garlic powder
  • 1/8 tsp celery seed
  • 1/2 tsp salt
  • black pepper to taste
  • 4 bay leaves (optional)

Instructions:

  1. In a large bowl, mix all ingredients (except bay leaves) very well.
  2. Form into 12 patties. 
  3. “Dry fry” the patties on a nonstick saute pan over medium to medium high heat. Toss in bay leaves, if desired for extra flavor, but do not eat. 
  4. Turn patties and heat until cooked through to an internal temperature of 165 degrees F.
